Peaches & Praline Summer Salad with Lemon Dijon Raspberry Vinaigrette

Ingredients

  • Salad Ingredients
  • 2 peaches
  • 2 (5 oz) containers of GreenWise arugula
  • 1 (4 oz) package of Publix Deli Honey Goat Cheese
  • ½ cup Publix praline pecans
  • ¼ cup pickled red onions
  • Vinaigrette Ingredients
  • ⅓ cup white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon chopped shallots
  • ⅓ cup extra-virgin olive oil
  • 2 tablespoons fresh-squeezed lemon juice
  • 3 raspberries
  • 1 teaspoon sugar

Directions

  1. Slice peaches lengthwise in circle, being sure to remove cores.
  2. Place peaches cut-side down on cast-iron (or outdoor) grill to achieve slight grill marks and bring out sweetness. Set peaches aside to cool.
  3. Combine all vinaigrette ingredients in blender and blend to desired consistency.
  4. Combine peaches, arugula, goat cheese, pecans, and onions in large bowl.
  5. Drizzle vinaigrette on top and serve immediately.
