Peaches & Praline Summer Salad with Lemon-Dijon Raspberry Vinaigrette

- Salad Ingredients
- 2 peaches
- 2 (5 oz) containers of GreenWise arugula
- 1 (4 oz) package of Publix Deli Honey Goat Cheese
- ½ cup Publix praline pecans
- ¼ cup pickled red onions
- Vinaigrette Ingredients
- ⅓ cup white wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon chopped shallots
- ⅓ cup extra-virgin olive oil
- 2 tablespoons fresh-squeezed lemon juice
- 3 raspberries
- 1 teaspoon sugar
Directions
- Slice peaches lengthwise in circle, being sure to remove cores.
- Place peaches cut-side down on cast-iron (or outdoor) grill to achieve slight grill marks and bring out sweetness. Set peaches aside to cool.
- Combine all vinaigrette ingredients in blender and blend to desired consistency.
- Combine peaches, arugula, goat cheese, pecans, and onions in large bowl.
- Drizzle vinaigrette on top and serve immediately.
