Ingredients

  • ⅓ cup cooked quinoa 
  • ⅓ regular cucumber
  • 4 cherry tomatoes
  • 2 oz salmon, skin removed
  • 2 teaspoons complete seasoning
  • 1 ½ cups fresh spinach
  • ⅓ cup dried cranberries
  • ⅓ cup sliced almonds 
  • Raspberry vinaigrette (or preferred dressing)

Steps

  1. Slice cucumber. Halve cherry tomatoes. Add seasoning to salmon and grill on medium heat on both sides for 4 minutes or to 145°F.
  2. Add spinach to bowl. Add rows of cucumbers, tomatoes, cranberries, and almonds. Add quinoa and salmon. Add dressing.
