Kelewele (Fried Spicy Plantains)

Ingredients

  • 2 teaspoons ground ginger
  • 1 ½ tablespoons ground red pepper
  • 1 teaspoon ground allspice
  • 2 teaspoons garlic powder
  • 2 teaspoons kosher salt
  • 4 tablespoons olive oil
  • 4 ripe yellow plantains, peeled & cut into bite-sized cubes
  • Vegetable oil, for frying

Steps

  1. Combine in large mixing bowl: ginger, red pepper, allspice, garlic powder, salt, and olive oil until blended. Add plantains and toss to coat.
  2. Preheat vegetable oil in cast iron skillet over medium-high to 350°F. Fry plantains 2–3 minutes, flipping a few times as needed, until golden brown. Drain on paper towel-lined baking sheet; cool slightly before serving.
