Kelewele (Fried Spicy Plantains)

Ingredients
- 2 teaspoons ground ginger
- 1 ½ tablespoons ground red pepper
- 1 teaspoon ground allspice
- 2 teaspoons garlic powder
- 2 teaspoons kosher salt
- 4 tablespoons olive oil
- 4 ripe yellow plantains, peeled & cut into bite-sized cubes
- Vegetable oil, for frying
Steps
- Combine in large mixing bowl: ginger, red pepper, allspice, garlic powder, salt, and olive oil until blended. Add plantains and toss to coat.
- Preheat vegetable oil in cast iron skillet over medium-high to 350°F. Fry plantains 2–3 minutes, flipping a few times as needed, until golden brown. Drain on paper towel-lined baking sheet; cool slightly before serving.
