Peach Fig Crumble

Ingredients

  • 6–8 ripe peaches
  • or 3–4 15 oz cans sliced peaches, drained
  • 1 ½ cups brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • 2 sticks butter
  • 1 ¾ cups flour
  • 1 cup chopped dried figs

Filling

  1. Peel and slice peaches. Place in medium saucepan and toss with ½ cup brown sugar, cinnamon, and honey. Simmer on low for 8–10 min until juices coat the back of a spoon. Place mixture in 12- x 8-inch pan.

Topping

  1. Soften butter. Add flour, remaining 1 cup brown sugar, and figs. Mix until topping has a crumbly texture.
  2. Place topping over peaches. Bake at 350°F for 25–30 min or until topping has browned. Allow to cool before serving.
