Quinoa Salad

Ingredients
- ⅓ cup cooked quinoa
- ⅓ regular cucumber
- 4 cherry tomatoes
- 2 oz salmon, skin removed
- 2 teaspoons complete seasoning
- 1 ½ cups fresh spinach
- ⅓ cup dried cranberries
- ⅓ cup sliced almonds
- Raspberry vinaigrette (or preferred dressing)
Steps
- Slice cucumber. Halve cherry tomatoes. Add seasoning to salmon and grill on medium heat on both sides for 4 minutes or to 145°F.
- Add spinach to bowl. Add rows of cucumbers, tomatoes, cranberries, and almonds. Add quinoa and salmon. Add dressing.
