Ingredients

  • 2 (16-oz) bags shredded collard greens
  • 48 oz reduced-sodium chicken broth
  • 1 (6–8-oz) smoked pork hock (or neck)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon kosher salt
  • ½ teaspoon pepper
  • Sweet onion, chopped (optional)
  • Diced, cooked ham (optional)

Steps

  1. Combine all ingredients in a large stockpot with lid; cover.
  2. Bring to boil over medium. Reduce to low; simmer 25–30 minutes or until greens are tender. Discard ham hock before serving.

Other preparation methods

Sauté: Chop 6 cups collard greens. Preheat large sauté pan on medium-high 2–3 minutes. Place 1 tablespoon olive oil in pan; add collards, ½ cup cooked ham pieces, ½ teaspoon kosher salt, and ½ teaspoon pepper. Cook collards 15–20 minutes or until wilted and tender.
